Harvesting of Sea Salt Intensifies in Tunisia

In the sun-kissed coast of Zarzis, Tunisia, Mare Alb, the country's leading sea salt producer, is gearing up for its annual sea salt harvest on November 10, 2024. This event marks a significant milestone in the production process of Tunisia's prized Le Flamant brand of sea salt, a staple in many Tunisian households and highly sought after by industries, particularly in Northern Europe and Scandinavia.

The sea salt harvest begins at dawn, a crucial timing to prevent the salt crystals from re-dissolving. The process unfolds as a mechanical ballet between trucks, harvesters, and workers, each playing a vital role in the operation.

Seawater for the production is pumped directly from the Mediterranean and undergoes a six-month evaporation process. As the water evaporates, the salt crystallizes at the bottom of the basins, which is then scraped by harvester blades. The crystals are then transported to Mare Alb's facilities for final washing, drying, and packaging according to their intended use.

The saline roads designed to support machinery and prevent salt contamination are bustling with activity. The trucks, subjected to rigorous maintenance to prevent corrosion due to high salinity, position themselves for collection and transport the harvest to washing and drying sites. After each workday, they are thoroughly washed in mechanical workshops to ensure their longevity.

Mare Alb's commitment to quality and mastery of the technical and scientific process is evident in every step of the production. The company, a subsidiary of Salins du Midi et des Salines de l'Est (SMS), ensures that the salt undergoes strict standards to maintain its purity before packaging and distribution.
